- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- -Temperatures of all the coolers, hot holdings and freezer was appropriate except two-1. The container filled with lettuce was stored above the ice cubes, the temperature was measured to be 12C.2. A hot holding, having a gravy in it was stirred properly and temperature was measured at 42C.Actions taken:-Staff was instructed that the risk food must be temperature controlled, keep it either below 4C OR above 60C. -Staff was advised to move the lettuce container to the cooler, as it was overfilled and the temperature was not maintained below 4C.-For the hot holding, staff was advised to increase the temperature. The temperature was again measured after a while, this time the temperature was 61C.
