      • 2) Two cloth towels were hung in close proximity to the hand washing sink. Do not hang cloth towels near the handwashing sink. Do not use cloth hand towels for drying hands.

      • Observation: 1) Holes and harborage spaces are available for rodents. Close all holes to prevent pests from living in the walls and under cupboards.
      • 2) Premise is infested with rats and most traps are not properly sized for rats, indicating that operator does not know how to eliminate a rat infestation. Hire a pest control company and follow their recommendations.
      • 3) There is lots of excess flour and other food debris around for rodents to eat. Clean all flour spills immediately.
      • 4) Ingredient bins are crusted with food debris. Clean.
      • 5) dough machine is not being properly cleaned and is attracting rats. Clean and keep protected from rodents when not in use.

      • Observation: Reviewed procedures for washing and sanitizing counters and food contact surfaces. Today, 100-200ppm chlorine sanitizing solution is available - good. Better cleaning is needed as there is some grease or food build up on surfaces..
      • Corrective Action(s): Clean surfaces to remove grease. Wash using soap, rinse, sanitize, and air dry. Inspect surfaces and make sure all surfaces are smooth, non absorbent and easy to keep clean (ongoing).

      • Observation (CORRECTED DURING INSPECTION): Food handler did not wash hands after touching raw hamburger (but then used tongs to avoid hand contact with cooked food)..
      • Corrective Action(s): Food handlers are to wash hands after coming into contact with raw hamburger as well as using tongs. Disposable gloves can also be used to avoid hand contact with raw meat along with proper hand washing.

      • Observation: Two door pizza prep cooler is keeping food at 6 C.
      • This cooler is mainly used to store pineapple, pizza shells, and lower risk foods however it does have a small volume of cheese and deli meats (to be used in 2 hours or less).
      • Corrective Action(s): Adjust this cooler so that it can keep food at 4 C or colder. Use accurate indicating thermometer to verify the temperature.
