      • Corrective Action(s): Ensure all cloths are being stored in a sanitizer at all times. Monitor - change routinely! All food contact surfaces are to be air dried after they are clean. T Towels are not to be utilized to dry food contact surfaces/implements.

      • Observation: Fruit flies are swarming around cart with juice dispenser.
      • This dispenser/cart is poorly designed, with multiple surfaces that are difficult to clean. Sticky juice residue is attracting flies and is almost impossible to clean proerly.
      • Cart should be rebuilt so that the motors and any other difficult-to-clean parts are fully covered to facilitate easy cleaning. Or remove juice cart and use juice in disposable containers.

      • Observation: See observations on juice dispensing cart. Flies were only noticed in the proximity of this piece of equipment.
