    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • -Used blue wiping cloths were placed on the stainless steel table in the prep area.Used wiping cloths are not to be placed on the tables. They must be immersed in fresh sanitizer solution to prevent bacterial growth or they are to be used once and placed in a hamper to be washed.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • -There was a hole in the top portion of the back wall of the walk in cooler next to the fan. Have this hole sealed to allow for easier cleaning and possible escape of cold air.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • -There was a toaster placed on a shelf next to and underneath in the storage room across from the office. Food equipment must be stored away from chemicals to prevent contamination. The toaster was moved to another area.

      • Thermometer could not be located in the walk-in cooler. Walk-in cooler verified at 3 C. Temperature records for cooler indicate days where recorded temperature was >4.0 C. Ensure that cooler is able to maintain a temperature of 4.0 C or colder. Ensure if temperature is observed at >4.0C action is taken.

      • The caulking behind the dishwasher is peeling, and mold is beginning to form. Repair the caulking to restore its condition and make it easy to clean. Clean and sanitize the affected area to remove the mold. Regularly clean this area to prevent future mold growth.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • A buildup of dust was observed on the walls and ceiling in the dish area. Clean the surfaces and establish a regular cleaning routine to prevent further buildup.
