      • *The flooring around the floor drain by the dishwashing area was cracked and lifting. A small section of the flooring was missing by the front entrance from the kitchen leading to the dining room. Repair flooring. Ensure all flooring is in a good state of repair to facilitate easy cleaning.

      • *Please remove the sticker from the new ice machine and the tape from the kitchen cart handles so that they can be cleaned and sanitized.The cutting board on the prep line was becoming grooved/stained - the operator has this on his list to order.

      • *Single use take out container was found in the flour storage container. Discussed proper scoops with handles should be used to protect product from contamination. Remove and review with staff. Corrected on site: Container was removed.

      • *Silver color tape was being used as a seal along the dishwashing table and hand sink instead of caulking material. Tape was lifting and some mould like material present. Remove and replace, ensure materials used to seal up high moisture area is waterproof and maintained in good condition.*Hand sink faucet by the coffee machine was loose. Secure faucet.

      • *Single use coffee lids stored by the coffee station was improperly displayed, beverage contact side up. Invert and ensure lids are stored down to prevent contamination. Corrected on site: Lids on the top of the stacks were discarded and rest inverted down.

      • *Dust build up on wall/ceiling vents, ceiling tiles directly above the front food prep area and dishwashing area. Clean vents and tiles and added to the routine cleaning schedule.*Build up of yellow stains on the wall directly behind the dishwasher. Debris noted on the floor/wall directly under the dishwasher in the hard-to-reach area. Clean areas and ensure it’s added to the routine cleaning schedule.

      • *Ice was found in the hand washing sink located in the front service area. Ensure hand washing sink is free from obstruction and kept clean. Review with staff. Corrected on site: Manager discussed with staff members.

      • Cupcakes in the walk-in cooler were not covered to protect from contamination. Staff indicated cupcakes were cooling. Immediately cover cupcakes and ensure all food products placed into cooler even for cooling are protected from contamination. Corrected on site: Staff covered the cupcakes with plastic wrap.

      • Staff members personal container of loose tea leaves was stored near the prep cooler. Immediately relocate staff personal food items to proper staff area. Review with staff members to ensure personal items are stored in designated staff area. Corrected on site: Container of tea leaves was removed.

      • A container of disinfectant wipes was found opened with a dried up wipe coming out of the container. Discussed with manager to ensure wipes are not used on food contact surfaces and the lid is properly closed to prevent wipes from drying out. Manager confirmed wipes are only used on non-food contact surfaces like door handles and switches. Corrected on site: Dried up wipe was removed and lid closed.

      • The stand alone industrial mixer had food caked on the underside of the splash guard and cage. Site indicated the mixer has not been used for the day. Immediately clean and sanitize mixer. Review with staff members all parts of the mixer need to be adequately cleaned and sanitized after use.Single use disposable utensils were improperly stored in the dining room and in the kitchen prep cooler. Wash hands and invert utensils to have the handles all in one direction to prevent contamination of the food end.

      • Build up of debris and dirt noted in corner under the dishwasher. Clean area and add the hard to reach area to the routine cleaning schedule.
