- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- No - there were no records being kept for the daily food safety temperature monitoring (with records to be kept for a period of 90 days). A copy of the AHS daily food safety checklist will be sent to the operator for review and use.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- No - some food products were being stored directly on the floor in the walk-in cooler and walk-in freezer. All foods and food products are to be stored at least six inches (15cm) off the floor and onto racks, shelves, or pallets.Also, the operator is to use washable utensils/scoops for dry food storage containers, and avoid using disposable plastic type cups, etc. (as one such cup was 'frayed' and stored inside a dry food storage container - and was removed and discarded at time of inspection).
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- No - there were no pest control records being kept on-site. The operator is to use the services of a licensed pest control company or to use and complete the AHS 'monthly pest control checklist' (with records to be kept for a period of one year).A copy of the AHS 'monthly pest control checklist' will be sent by email to the operator.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- No - note that only one of the two exhaust hood canopies in the front food prep area was functional, with lack of 'ventilation' in the south side exhaust hood canopy. The operator is to contact a licensed technician to conduct an inspection and make repairs or adjustments as necessary, to ensure both exhaust hood canopies are functional when in use.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- No - note to ensure more regular cleaning inside the front food prep refrigeration unit, as there was accumulation of food spillage inside the unit on shelving and on the compressor motor unit.
