- Observation (CORRECTED DURING INSPECTION): Four containers of Bush Brand Lemon coloring and three containers of unlabeled lemon yellow coloring (container indicated for external use only) observed on dry storage shelf during inspection. Manager stated that these coloring are not used at any food items preparing in the kitchen at the time of inspection. Manager immediately voluntarily discarded the containers of coloring from the shelf, and poured bleach on the discarded coloring. Do not purchase Permicol Brand Lemon Yellow or unlabeled Lemon Yellow coloring. Permicol Brand Orange Red and Lemon Yellow coloring are not approved for human consumption. Ensure to ONLY purchase food colorings which fit for human consumption

- Observation: Ice machine at bar observed with pink mold/film along the inside of the filter. Staff turned off the ice machine during inspection.
- Corrective Action(s): Clean and sanitize the aforementioned ice machine as per manufacturer instructions to remove mold/film. Discard the ice currently in the ice machine. Do not use the ice machine until verified in a sanitary condition by the health inspector. Use the ice from the ice machine in the kitchen if necessary.

- 1. Hand washing station upon entrance into kitchen and in back preparation area near the walk-in freezer not supplied with hot water during inspection. Both hot water nozzles at both hand washing stations are observed not in good working order.
- 2. Hand washing station at bar is not supplied with paper towel. Staff placed paper towel at the hand washing station during inspection.
- Corrective Action(s): Maintain all designated hand washing stations supplied with hot and cold running water, liquid soap and paper towel AT ALL TIMES to ensure staff are washing their hands properly before handling food. Hot and cold running water must be available at adequate frequency and temperature to remove physical and biological contaminants. Failure to comply in future may lead to progressive enforcement action.

- 1. Discard dirty water in both buckets. Do not store dirty water on site as it can lead to entrance/breeding and/or harbourage of pests such as rodents and flies.

- Observation:
- 1. Sanitizer dispenser at 2-compartment sink is dispensing DDBSA/lactic acid sanitizer at a concentration >>272/700 ppm. Staff stated that they have cleaned the line but the service technician has not yet visited. Sanitizer strips are not available on site.
- 2. High-temperature dishwasher rinse temperature gauge is observed not functioning. Staff was educated get the rinse temperature gauge repaired to ensure they are able to verify dishwasher rinse water temperature at or above 82'C from the manifold (at or above 71'C at the plate).
- Corrective Action(s):
- 1. Contact service technician to repair the sanitizer line to ensure sanitizer is available at a concentration of 272/704 DDBSA/lactic acid for adequate sanitizing of all food contact surfaces and equipment. Continue to use bleach sanitizer at a concentration of 200 ppm (by mixing 1/2-1 teaspoon of bleach with 1L of water), until the sanitizer dispenser is verified functioning adequately. Obtain DDBSA/lactic acid test strips from the chemical supplier to verify sanitizer strength (As per approved sanitation plan).
- 2. Contact service technician to repair rinse water temperature gauge to ensure it is functioning to verify rinse water temperature as per approved sanitation plan. - Corrective Action(s): Contact repair-person to repair the sanitizer dispenser to ensure it is dispensing DDBSA/Lactic acid at a concentration of 272/708 ppm. Obtain DDBSA/lactic acid sanitizer strips from the technician to ensure you are able to monitor and verify sanitizer strength daily (or as per approved sanitation plan). Bleach is available on site and instructions to prepare bleach solution in the meantime was described to staff during inspection.

- Observation (CORRECTED DURING INSPECTION): High temp mechanical dishwasher is used primarily for dishwashing. During inspection, the high temp mechanical dishwasher was not functioning properly that could result in inadequate washing and sanitation of the utensils. Staff stated that the kitchen will be next used on weekend and the dishwasher will be repaired prior to kitchen use. Staff called the technician during inspection. 2 compartment dishwashing sink will be used as an alternative for manual dishwashing if required.

- Observation: 1. High temp mechanical dishwasher was run multiple times during inspection and the maximum temperature recorded on dish surface after ~10 cycles was 64.5C. Staff believed that the booster is malfunctioning.
- 2. Thick ice build up was observed on the ceiling of walk in freezer behind the fan which was falling off occasionally. Ice build up could interfere with the cold air circulation within the freezer.
- Corrective Action(s): 1. Repair the high temp mechanical dishwasher IMMEDIATELY.
- 2. Defrost/service the walk in freezer to prevent the ice build.
