      • Observation: 1. Pink organic buildup noted on three of the four soda dispenser heads.
      • 2. One of the low temperature bar dish machines (closest to back of kitchen area) had no iodine detected at the plate level.
      • Corrective Action(s): 1. At the end of the day, remove the removable parts, clean, scrub, rinse and sanitize the soda dispenser heads. Ensure no organic buildup is noted on the heads.
      • 2. Do not use the identified bar dish machine. Fix the bar dish machine so 12.5 - 25.0 PPM iodine residual can be detected at the plate level to ensure dishes are being adequately sanitized after washing. In the mean time, only use the second bar dish machine or kitchen dish machine.

      • The nozzle heads were cleaned and sanitized during the inspection. Please remember to clean and sanitize the bar guns often, as indicated by your Sanitation Plan to prevent organic growth.

      • Observation: Noted an ice scoop stored directly within one of the ice bins in the bar area, with the handle in contact of the ice.

      • Observation: Cold prep drawer noted along the cookline was at 44F during the inspection. As per the Kitchen Manager, it was measuring at 37F this morning when temperature was taken but he has noticed that the temperature has increased. He already called maintenance to have the compressor for this unit switched out.
      • Corrective Action(s): **Issue corrected during the inspection** As per the Kitchen Manager, all cold food are stored away in the walk-in cooler at the end of the day, food are only brought out to the prep drawers right before they open their doors (items were just brought out during the inspection). All cold food in this unit were moved to another functioning cooler. Do not store any cold potentially hazardous food in this unit until it has been serviced.

      • Observation: > 500 ppm QUAT residual detected in the QUAT sanitizer containers and spray bottles in the kitchen and bar area during the inspection. As per the manufacturer's instruction, 200 ppm QUAT is required for this type of sanitizer.
      • Corrective Action(s): Issue corrected in the kitchen during the inspection. Kitchen Manager diluted the QUAT containers and after the dilution, 200 ppm of QUAT was detected. Contacted the chemical company to adjust the concentration on the wall mounted dispenser.
      • Bar Manager was aware of this issue as well and will be diluting the sanitizer spray bottles in the front of house area.
      • Use the QUAT test strips that are available onsite and only use 200 ppm QUAT for sanitizing food contact surfaces. When a higher concentration is used, QUAT residual that are left over on the surfaces may get transferred to any food products that they come into contact with, causing a chemical hazard to the customers.

      • 2. Used tea bag noted in a tea pot in the bar area.
      • Corrective Action(s): 1. DO NOT USE both glass warewashers until 12.5 - 25.0 ppm iodine residual can be detected at the machines. All glasswares that need to be washed and sanitized today will need to be run through the kitchen dish machine. Bar staff contacted maintenance for fixing the glass warewashers during the inspection.

      • Observation: 1. Seeping water noted from one of the pipes coming out of the kitchen dish machine when in operation. As per Kitchen Manager, they are aware of issue and is looking to fix issue in the next couple months.
      • 2. 0 PPM iodine detected in the glass warewashers (2 units in total) during the inspection.
      • Corrective Action(s): 1. Fix the pipe so that there are no longer pooling water when the kitchen dish machine is in use. Pooling water allows for the harbourage of pests. This is evidenced as 10+ ants were noted around that area during the inspection, therefore this becomes a pest issue and needs to be addressed as soon as possible.

      • 2. Bar staff contacted maintenance for fixing the glass warewashers. DO NOT USE both glass warewashers until 12.5 - 25.0 ppm iodine residual can be detected at the machines.

      • Observation (CORRECTED DURING INSPECTION): 1. Glass washer near the kitchen measured with 0 ppm iodine solution. Stock iodine solution bottle was empty.
      • 2. Two sanitizing spray bottles used at the bar area measured with 50-100 ppm quats solution. Staff stated the bottle was emptied and refilled every 3 days.
      • Corrective Action(s): 1. Staff replaced the stock iodine solution. Iodine concentration measured at this glass washer was 25 ppm. Clean and sanitize all glasses ran through this glass washer this morning.
      • 2. Staff discarded and refilled the sanitizing spray bottle with 200 ppm quats sanitizer. Discussed with the manager to increase the frequency of replacing quats solution in the bottle as its concentration lowers over time. Use the quats test strips to verify the concentration and establish a schedule.

      • (1) Two quaternary ammonium sanitizer spray bottles contained approximately 0ppm quats (one in kitchen and one in bar)
      • (2) Cloths used to wipe counters and cutting boards are not sanitized after use.
      • The following is required:
      • (1) Both quaternary ammonium spray bottles were replaced at time of inspection and contained 200ppm quats.
      • (2)Cloths were sanitized in quats solution and all food contact surfaces were re-sanitized prior to use again.

      • Observation (CORRECTED DURING INSPECTION): Multiple utensils were stored in conditions which could cross-contaminate food:
      • (1)Tongs for meat,chicken and seafood were at stored in a container of water at room temperature along the cook line.
      • (2)Ice cream scoop were stored in a container of murky water.
      • Corrective actions: (1) Place original tongs in dishwasher. Obtain a new set of color-coded tongs and have a separate container for each pair of tongs. Ensure they are stored on ice at all times during use.
      • (2) Container of murky water was discarded and clean scoops were placed in a container of ice for use. Ensure that ice scoops are stored in ice at all times during use. Alternatively, a dipper well may be used.
      • Utensils must be stored in conditions that prevent the rapid growth of bacteria (e.g on ice).Colour -coded tongs cannot be stored together due to cross-contamination.
