- Observation (CORRECTED DURING INSPECTION): Front upright cooler was noted with an air temperature of 10.2C. 5 blocks of feta cheeses were noted with internal temperature of 9.4C (lowest temperature attained) and a container of sliced tomatoes was noted with an internal temperature of 9.5C.
- Corrective Action(s): **Issue corrected during the inspection** Operator discarded the 5 blocks of feta cheeses and container of sliced tomatoes during the inspection. No other cold potentially hazardous food was stored in this cooler after the abovementioned items were discarded.

- Observation: Cold potentially hazardous food products (e.g. sliced tomatoes) were noted at 10C in the topping cabinet front display cooler. (top layer). The unit itself was able to maintain at 4C or below. This is likely due to the individual toppings being overloaded in the containers and no lids are available for these containers (due to constant use) that the warm air from the environment is transferred to the top layer of these containers. As per operator, the turnover time for these containers are quick.
- Corrective Action(s): Please do not overload the topping cabinet in the front display cooler to allow products to be stored at 4C or below as the top layer of the ingredients are noted over 4C. Alternatively, place time stamp on containers and discard any unused ingredients after 4 hours if unable to keep temperature for the entire container of ingredient below 4C.
- During the follow-up inspection, the temperature of these ingredients will be assessed. If temperature is noted over 4C and time is not used as a control, these products will all be discarded and progressive enforcement actions may ensue.

The temperatures of some potentially hazardous food stored at this unit were noted as follow: Sliced tomatoes at 6.5C (open cooler), greek salad at 7.6C (open cooler), sliced mushrooms at 6.7C (in bottom of reach-in cooler).
