      • Scoops without handles were observed in bulk dry food dispensers. The operator removed them immediately. Please obtain scoops with handles and ensure they are stored upright so that handles do not come into contact with the food.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the back of house was lacking hand soap. This was immediately refilled by the operator. Hand sinks must be fully stocked at all times.

      • Only one sanitizer bucket available on the cookline and 2 wet cleaning cloths left on prep table.Please ensure santizier buckets (200PPM of Quats) set up at all stations and maintain wet cleaning cloths inside between uses.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher was not equipped with sanitizer.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Handsink in the back lacking paper towels.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Light covers (2) required for bulbs in the 3rd office upstairs.Operator explained they are on order.

      • Observed a couple pieces of hard cheese left directly on steel pan/tray (a little unclean) inside cookline cooler.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Light covers (2) required for bulbs in the 3rd office upstairs.Operator explained they are on order.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Observed large green cutting board in cookline with multiple small grooves on them. Operator removed and will replace with new one.
