    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The prep cooler was measured at 9 °C. Food items including pepperoni, meat, chicken, and cut vegetables were measured at approximately 10 °C. The operator was instructed to immediately move all food items to the walk-in cooler. The prep cooler must be repaired to maintain a temperature of 4 °C or below. All high-risk foods must be stored at 4 °C or below at all times.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There were no paper towels at the handwash sink located in the main kitchen; the operator refilled the dispenser immediately. Handwash sinks must be fully stocked at all times.

      • Ventilation canopy and grease trap are not being professionally cleaned by a third party contracted company every 6 months. Facility is doing this on their own. Please ensure these are being done every 6 months by a licensed company.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Fume hood filters are greasy and dusty - please remove and clean on a monthly basis (or more often if needed).

      • Two unlabelled spray bottles observed. Both spray bottles were labelled at the time of inspection to indicate their contents (soap and sanitizer).

      • Small gap noted on the right end of the weatherstripping for the rear entry door. Please repair/replace the weatherstripping.
