      • Paper towel dispenser for hand sink beside dishwasher was not working (staff reports battery needed and in progress). Ensure paper towel provided to wash hands in meantime; keep spare batteries on-site.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Some dust / debris noted on ceiling above condenser fan. Remove any dust from around condenser fan in walk-in cooler.

      • Wall/corner by dishwasher has baseboard and wall covering separating from underlying wall. Repair wall and baseboard to ensure that this area is easily cleanable.

      • No active sanitizer concentration was observed on dishes despite priming. Dishwasher company called to repair.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Initially there was no paper towel in hand sink dispenser by dishwasher. Replaced at time of inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Wall/corner by dishwasher has baseboard and wall covering separating from underlying wall. Repair wall and baseboard to ensure that this area is easily cleanable.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Small flies noted on walls/ceiling. Improve air flow, ensure all surfaces dry out, and take appropriate pest control measures to control fly populations.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some ceiling tiles are missing and they are not cleanable (acoustic rather than smooth and cleanable). Ensure all ceiling tiles are in place and are cleanable. **OUTSTANDING FROM PREVIOUS REPORT**
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Feb 29/24 inspection: black mould/debris was noted on wall behind dishwasher and on caulking on dirty side of dishwasher. Dish washing area requires more detailed cleaning. **OUTSTANDING SINCE PREVIOUS REPORT, ensure plan is in place to keep this area clean, dry and free of mould**

      • Paper towel was replaced in dispenser during inspection - good.
    • 15. Is the facility free of a pest infestation?
      • Fly strip noted by dishwasher/over onions that was filled with small drain flies. Remove strip once it has caught flies. Do not put fly strip over any food product or utensils. Consult with pest control operator about additional methods to control flies.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some ceiling tiles are missing and they are not cleanable (acoustic rather than smooth and cleanable). Ensure all ceiling tiles are in place and are cleanable.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1. Drawer under prep table with slicer had unfinished wood and was not easily cleanable. Drawer not in regular use and removed during inspection.2. Stools used by staff for breaks were observed in preparation area and were broken/not maintained in a clean condition. Remove stools and ensure all items in preparation area are easily cleanable/kept in good condition.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • **Feb 29/24 inspection: black mould/debris was noted on wall behind dishwasher. Food debris was left in screen even though no staff currently working. Dish washing area requires more detailed cleaning.
