      • Staff was not sanitizing re-usable dishes after washing and rinsing. - All dishes need to be sanitized in an approved sanitizing solution after washing and rinsing. Approved solutions include 100 ppm chlorine (household bleach), or 200-400ppm QUAT. Ensure utensils are submerged in a sanitizer for at least 2 minutes after washing, then let airdry.
