- 205 - Critical Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
- Observation: (CORRECTED DURING INSPECTION) Refrigeration (internal) temperatures in one of the refrigerators in the kitchen were measured to be at 6.8°C. (Public Health Significance) Refrigeration temperatures for perishable foods must be less than 4°C to prevent the growth of disease causing bacteria and toxin production which could possibly lead to food-borne illnesses.
- Corrective Action: Operator was asked to move the food items such as sushi to another refrigeration unit at the time of inspection. Operator to ensure temperatures are maintained (4°C or below) in the cooling & freezing units. Monitor and log temperatures regularly, adjust and have repaired as necessary to provide a temperature of 4° at all times.
- 304 - Premises not free of pests [s. 26(a)]
- Observation: Mice droppings were observed in the corners of the back storage area. (Public Health Significance) Rodents and other pests may cross contaminate foods and surfaces with feces and urine, which could lead to potential food- borne illnesses.
- Corrective Action: Clean mice droppings by spraying with a bleach solution or disinfectant & let it rest for at least five minutes. Then wipe & collect the mice droppings and dispose it in sealed bags. Operator to ensure to wear masks and gloves while doing this process. Clean and sanitize area where droppings are located and monitor situation. Properly seal any openings through which pests can enter. Continue using traps & monitor for pest activity.
