- Snow shovel and ice scraper were stored directly next to prep sink. Move these items and ensure items not associated with food handling are stored away from food handling areas.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Hand sink by sushi cooler did not have soap. Staff moved bottle from hand sink on prep table to this hand wash sink. Ensure both sinks are stocked with soap and paper towel. Ensure staff are aware that glove use does not replace handwashing.

- Cloths were used to line trays used for storage in walk in cooler. Remove cloths as they cannot be easily cleaned and can harbour bacteria. All surfaces must be smooth, non-porous and easy to clean.

- High temperature sanitizing dishwasher was not working. Staff will use three compartment sink dishwashing method. Ensure dishwasher is repaired and reaching a temperature of 71 degrees Celsius at the plate level.
