      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher was measured at a maximum temperature of 64 to 65 degrees C at the utensil surface. Dishwasher was checked over multiple cycles.
      • Corrective Action(s): A bleach water sanitizer was prepared at 100 to 200 ppm chlorine in one warewashing sink. Ensure that items that are run through the dishwasher undergo a final manual sanitizing step by full immersion in the bleach water sanitizer. Continue to follow this process for all equipment and utensils until it is confirmed that dishwasher is capable of achieving sanitizing parameters. Refer to violation 308 for additional details.

      • Observation (CORRECTED DURING INSPECTION): One hand sink (near entrance of kitchen) lacked paper towels at start of inspection. It was stated that paper towel stock was not available at this time.
      • Corrective Action(s): Paper towels were supplied during the inspection. Ensure all hand sinks are properly supplied at all times in order to facilitate proper hand washing.

      • Observation: High temperature dishwasher is not reaching at least 71 degrees C at the utensil surface during the final rinse.
      • Corrective Action(s): Ensure dishwasher is serviced so that it is in good working order and capable of reaching at least 71 degrees C at the utensil surface during the final rinse for sanitizing. Note: Rinse gauge should reach at least 180 F / 82 C during the rinse cycle. Date to be corrected by: November 16, 2022.
