- Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (three sausage rolls) observed in hot display case. Internal food temperature of sausage rolls measured 28 degrees C. No time tracking system in place. Photo taken.
- Corrective Action(s): Discarded. In the absence of an approved time tracking system, ensure potentially hazardous food is kept at either 60 degrees C or more, or cool rapidly and maintain at 4 degrees C or less to limit bacterial growth. Proposed changes to operations and food safety plan (such as implementation of time tracking) must be approved by the district or covering Environmental Health Officer (EHO).

- Observation (CORRECTED DURING INSPECTION): Three sandwiches and two bottles of kombucha were observed within glass display cooler that measured 14 degrees C. Internal food temperature measured 15 degrees C. Bottles of kombucha were labeled "keep refrigerated." Items stored in cooler for greater than 2 hours.

Note: Hot holding unit also contained other foods, which were not discarded as they are not potentially hazardous and therefore do not require hot holding (plain and chocolate croissants).

- Observation (CORRECTED DURING INSPECTION): 1. Two stainless steel trays were holding cold potentially hazardous foods in ice bath at room temperature. Items included cooked bacon, cut vegetables, and eggs. Ice bath only covered bottom of inner trays.

- Corrective Action(s): Required operator to move those items into a cooler at 4 C or lower if these items were at 4 C or higher for less than 2 hours accumulative. If longer, items to be discarded. Discussed that items can be left at room temperature during busy times only and the ice bath must cover all sides of inner container fully. When not in use, all potentially hazardous foods must be stored in a working cooler at 4 C or lower.

- 1. Store all garbage in a secure bin until it can be disposed. All garbage and organic bins must be coverd and protected as they are pest attractions.

- 1. Dishwasher is not in good working order; staff onsite explained that there is a leak from the dishwasher whenever it is used. Operator indicated that a new dishwasher is in order and expected to arrive on Tuesday April 6 for installation.
- 2. Sliding doors for a display cooler is broken. Sliding door is not able to properly close so cold air escapes and the door falls off when it is opened.
- Corrective Action(s): Required operator to:
- 1. Replace the dishwasher as soon as possible. Until dishwasher can be replaced, manual dishwashing at two compartment sink must be done. Bleach available on site for proper sanitization of utensils.
