- Observation (CORRECTED DURING INSPECTION): Dishwasher is not able to maintain adequate sanitizing rinse temperature of 71'C at the plate surface. Staff was provided signage and instructions on how to prepare the 2-compartment sink as a temporary method to clean and sanitize dishwashware, equipment and utensils.
- Corrective Action(s): Clean and sanitize dishware, utensils and food contact equipment using the 2-compartment dishwashing method with 100 ppm chorine solution or use single-use disposable dishware in the meantime until the dishwasher is repaired. Contact the health inspector once the dishwasher is repaired.

- Observation: High-temperature dishwasher is not able to reach 71'C at plate surface during final rinse temperature. Dishwasher was adjusted by staff during time of inspection. However, after more than 10 attempts, dishwasher reached a maximum temperature of 63'C at the plate surface.
- Corrective Action(s): Repair dishwasher to ensure it is able to reach a temperature of 71'C at the plate surface. Temperature gauge during the rinse cycle should read at least 82'C to ensure dishes, food contact equipment and utensils are effectively sanitized.
