      • Observation (CORRECTED DURING INSPECTION): The following cold potentially hazardous foods (PHF) had internal temperatures > 4 deg C (between 9-12 deg C)
      • - Milk containers = x7 cartons
      • - Whipping cream = x4 cartons
      • - Half and Half = x7 cartons
      • - Opened lemonade juice = x1
      • - Opened orange pure breakfast juice = x1

      • Observation: - Upright cooler unit was not able to maintain 4 deg C ambient air temperature at the time of inspection. Ambient air temperature registered between 8-12 deg C.
      • - Previous temperature records (month of September) indicated ambient air temperatures above 4 deg C throughout the month.
      • Corrective Action(s): - Do not store any cold potentially hazardous foods in the cooler unit.
      • - Service, repair, adjust, or replace the cooler unit such that the cooler unit in the facility can maintain 4 deg C or lower temperatures.
      • - Notify district health inspector prior to storing cold potentially hazardous food items in the cooler.
      • - Manager has placed a "Do not use" sign on the cooler unit. Facility to use cold storage located at UFV Prep kitchen in the mean time.

      • Scoop stored on top of the ice container.
      • Corrective Action(s):
      • Cover the ice container to prevent contamination.
      • Store ice scoop in a cleaned and sanitized container when not in use.

      • Corrective Action(s): Keep sandwiches stored in the back of the display cooler where it is at 1-2 deg C. Monitor this display cooler closely.

      • Observation: Dishwasher final rinse reached between 70 to 70.7 deg C. High temp. dishwasher must be reach at least 71 deg C at plate surface. Dishwasher was checked 3-4 times. Rinse temp. gauge read less than 180 F (82 C).
      • Corrective Action(s): Service this equipment immediately. For mean time, containers and blenders can be washed in the dishwasher but sanitize in the two compartment sink (200 ppm Quats) and air dry or use the dishwasher in the Canoe Kitchen until dishwasher has been repaired.
