- Meat balls and chili were held at 55-58C in the hot holding unit. Keep cooked high-risk foods at 60C or above during hot holding. The operator indicated that the food had been there for less than 1 hour and that the hot holding unit was not working properly. The food was then reheated to 74C in the microwave and transferred to a new hot-holding unit.
