      • Meat balls and chili were held at 55-58C in the hot holding unit. Keep cooked high-risk foods at 60C or above during hot holding. The operator indicated that the food had been there for less than 1 hour and that the hot holding unit was not working properly. The food was then reheated to 74C in the microwave and transferred to a new hot-holding unit.

      • The handwashing station within one public washroom was observed without soap and garbage bin. The only drying method available was with paper towels. ** Ensure each handwashing station is equipped with soap and garbage bin for paper towels.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The frame at the entrance of the kitchen areas was observed with unfinished wood. ** Repair the area above to be smooth, non-absorbent, and easy-to-clean.
