      • Two Black & Decker griddles were stored in the cupboard without cleaning. Crumbs and food debris were observed to be left on the electric griddles.The operator was instructed to clean and sanitize the griddles, along with the surfaces within the cupboard.

      • Hot water is used for dish sanitization. Temp log of hot water during sanitization was not available. Obtaining water and maintaining a temperature of 77C throughout the sanitizing process is challenging. Please use one of the approved sanitizers instead:- Bleach solution 100ppm- QUAT solution 200 ppm-Iodine solution 12.5 -25 ppm

      • There is no monitoring log to record temperature for the cooler and fridge. Please record temperatures daily to ensure perishable items are properly stored below or at 4C.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • There is no other thermometers aside from the built-in one in the cooler and fridge. There is no thermometer to monitor food temperature during cooking/reheating. Please equip the cooler and fridge with a working thermometer. Please obtain a thermometer that can be calibrated to monitor food temperature.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There is no soap dispenser for the handwashing sink in the kitchen. Please provide soap dispenser adjacent to the h/w sink.
