      • Observation(s): • Acquire chlorine test strips to be able to confirm chlorine sanitizer concentrations • Acquire a probe thermometer to be able to monitor internal food temperatures.

      • Observation(s): • Please obtain test strips for quats sanitizer and chlorine bleach. • Please obtain thermometers and place them in the walk-in refrigerator and prep cooler in the kitchen.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
      • F2.1B A thermometer accurate within 1 °C must be available to monitor processes.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): • Please always have your spray bottle full with quats sanitizer solution from your dispenser. Also, please clean the existing spray bottle thoroughly or obtain a new spray bottle and label it accordingly. • Please always have chlorine bleach solution prepared ahead of time for storage and disinfection of wiping cloths to ensure adequate sanitation.
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
