- The concentration of bleach water available in the spray bottle in the kitchen measured approximately 50 ppm.Bleach water for sanitizing food contact surfaces must measure between 100-200 ppm. Solution was remade during inspection and then measured 100 ppm.

- The residual chlorine concentration at the dish level during the sanitize cycle was undetectable.Have the dishwasher serviced/repaired. Residual chlorine concentration at the dish level during the sanitize cycle must measure 100 ppm.
