- Bamboo mats used for rolls, that are also used for non acidified rice, are not covered with plastic wrap. Cover bamboo mats with plastic wrap before rolling rolls as they are not smooth and easily cleanable and can cause growth on the surface AND change every 2 hours to reduce pathogen growth.

- 1. There was cooked fish cake and egg in the hot holding unit. Measured 40C. Ensure the hot holding unit is at or above 60C.2. The facility does not have a hot holding unit to store fried chicken in when there are large orders, take out or to keep up with demand. Purchase hot holding unit.3. Rice scoop was stored in room temperature water, measured 23 degrees C. Ensure rice scoops are stored below 4, above 60C or in sanitizer.

- July 29, 2025: There was no paper towels available in either the customer washroom or the staff washroom. Napkins were placed in the customer washroom during inspection. July 8, 2025:Several paper towel rolls were not being stored in the dispensers.Either obtain paper towels that fit the existing dispensers, or install new paper towel dispensers that fit the paper towel available in the facility.

- The concentration of chlorine based food contact surface sanitizer (Suma Diversol BXA) in spray bottles in the facility was undetectable.Solution was remade and then concentration measured 100 ppm. Ensure that solution is made often enough to maintain concentration at required level (100-200 ppm for chlorine).

- Soiled wiping cloths were being stored on counter tops.Reusable wiping cloths must be stored in sanitizer solution when not in use.

- Soiled ice scoop was being stored in the ice machine, with the handle directly in contact with the ice.Scoop was removed from the ice machine and instructed to be cleaned and sanitized, and then stored outside the ice machine in a way that protects it from contamination.

- Concentration of chlorine based food contact surface sanitizer in wiping cloth bucket by the three compartment sink was too strong (greater than 1000 ppm).Solution was diluted until the concentration measured 100 ppm. Ensure that solution is made according to the manufacturer's instructions and that test strips are used to verify the concentration after the solution is made.

- Cut raw potatoes were soaking in water at room temperature. Internal temperature measured 18 degrees Celsius.Potatoes were moved into refrigeration. Perishable food must not be stored at room temperature.

- Built-in drain plug for the middle dishwashing basin was not holding water. Drain plugs available did not hold water.Well-fitting drain plugs are required for proper dishwashing. Obtain three well-fitting drain plugs for the three compartment sink.
