- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- General cleanliness requires improvement. Cleaning required in the following areas: Behind and under equipment/shelving units. Several ceiling air vents have build up of dust/debris. Mold noted on seals of some fridges (#9 and #14). Standup freezer at the end of the cooling line requires defrost of ice build up.

(b) insects, rodents and other pests are controlled;
- Currently dealing with rodent issues. Droppings noted on shelving in the bakery area. Pest control is contracted and coming regularly. Ensure any effected areas are thoroughly cleaned and sanitized.
