    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Approved sanitizer solution was not observed. Ensure test strips are present as well.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • *Thermometers in some refrigeration units are missing.*Two refrigeration units were measured to have temperatures higher than 4 C. Ensure all refrigeration temperatures are maintained below 4C.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Mechanical dishmachine was tested with a probe thermometer and observed to not be reaching sanitizing temperatures. Ensure sanitizing temperatures are reached.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Canopy hood/ventilation hood above the grill area was observed to be due for cleaning.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Dust was observed on the cable above drying rack. Please ensure all areas are clean and sanitary.
