      • *Preparation cooler temperature was measured with a probe thermometer. Cheese and egg patties were tested with a probe thermometer. Temperature was measured to be at 7 C (cheese) and 8 C (egg patties). Please ensure food is maintained at under 4 C.

      • *Cleaning was observed to be needed in a few areas. Areas were shown to the operator (i.e. common areas, walls).

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1. Buns on trays/rack were left open inside the walk-in freezer. The staff present covered the food items during inspection.Please ensure all food items at the facility are always covered to prevent contamination. 2. Scoops used for portioning food such as rice and chicken were not being changed regularly. The staff present stated that the scoops are left at room temperature for 4 hours. The PHI instructed the staff to move the scoops out for washing and sanitizing during inspection. Please ensure scoops used for portioning are changed or washed and sanitized every 2 hours.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The kitchen exhaust/ventilation system is overdue for cleaning.Please contact a service professional to clean the system and hoods.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • A water pipe underneath the oven at the back food preparation area was leaking. Water spillage was observed on the floor and underneath shelves/counters. Please repair the damaged pipe.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The floor around the back food preparation area was unclean. A staff present commenced mopping during inspection.Please ensure the entire facility is always maintained in a sanitary condition.
