    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • High temp dishwasher final rinse cycle on dishes was measured at 58.6 C. A waterproof thermometer was used to run though dishwasher at the time of inspection. Final rinse cycle on dishes needs to be at least 71 C on dial, rinse cycle needs to be at least 82C (180 F). In the meantime, operator will use the sink close to the Hobart high temp dishwasher to soak dishes coming out of the dishwasher at least 100 ppm chlorine sanitizer at least 2 minutes and air dry afterwards. Ensure this high temp dish washer is fixed and final rinse cycle reaches at least 82C (180F) on dial. Or a commercial dishwasher that has at least 50 ppm chlorine sanitizer at final rinse cycle on dishes by October 31, 2023.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • A paper towel stand moved to the hand washing sink at the time of inspection. Ensure liquid soap with a pump is purchased instead of a dish detergent without a pump used as liquid soap to prevent cross contamination.
