- Operator indicated reusable dishes are washed in the two-compartment sink. Tableware that is reusable must be washed in the NSF certified dishwasher with the sanitizing cylce in use. a two-compartment sink is not sufficient for washing, rinsing and sanitizing reusable tableware. Improper dishwashing can lead to illness. Operator indicated they will resume use of the dishwasher for reusable tableware.
