    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Scoops for rice and hot items were noted out on the preparation line in standing water. To prevent microbial growth on scoops and water, add ice to water, use sanitizing solution for scoops, or ensure scoops/containers are washed/rinsed/sanitized at least every 2 hours.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Noodles were noted soaking in warm water on back counter. In order to prevent microbial growth in water, limit the time that noodles soak in warm water (max 2 hours with timer) or keep in refrigerator.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Caulking around preparation sink is moulding and in disrepair. If caulking can not be cleaned, it must be replaced.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Tape noted on one of the rice cookers to hold it together. Tape is not easily cleanable; repair or replace rice cooker.

    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Opened can was stored in the walk-in. Please ensure that when canned products are opened, they are transferred into a food safe container for storage.
    • 20. Do food handlers at the facility have adequate food safety training?
      • Please provide copy of certificate for staff who has current food safety certification. If no staff certified, course will need to be taken.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Wall is chipped above the electro-freeze machine on counter in back area. Please repair.Wallpaper is torn in both bathrooms to the left of the mirrors. Please repair.
