      • 1) Improper reheating was observed.Chicken was measured between 47 to 55 degrees C on top in the hot Holding unit: Chicken was not reheated to 74 degrees C or higher before serving or hot holding.Reheat all food to 74 degrees C or higher before serving or hot holding. 2) Preparation cooler:Chicken was measured at 7.0 degrees C. and tofu was measured at 6.4 degrees C in the prep cooler inserts. Store all cold perishable food at 4 degrees C or below.

      • Concentration of quat based sanitizer available for use measured approximately 100 ppm. Solution was changed during inspection, and then concentration measured 200 ppm. Ensure that food contact surface sanitizer solution is changed out frequently enough to maintain at required concentration (200 ppm for quat sanitizer).
