      • Observation (CORRECTED DURING INSPECTION): Front tempered glass in front of prep cooler was removed and not in place at time of follow-up inspection due to the glass randomly shattering the night before. Operator placed a temporary cover in front of prep cooler to protect from contamination until new glass cover installation. As per operator, the new glass in enroute and will arrive today.
      • Corrective Action(s): Replace missing glass to ensure food items are protected from contamination.

      • Observation (CORRECTED DURING INSPECTION): Par-cooked chicken wings that were stored in counter-top cooler measured above 4 degrees C. Operator stated the wings were transferred to the cooler in the morning and the cooler was functioning properly in the morning. Food items were within the cooling curve time frame and was not time and temperature abused. Food items were transferred to the walk-in cooler where it measures less than 4 degrees C.
      • Corrective Action(s): Ensure all cold potentially hazardous food items are stored at 4 degrees C or less.

      • Corrective Action(s): Ensure the can opener blade area is adequately cleaned and sanitized and free of debris before use to prevent potential physical contaminants from entering into the food.
