    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • High-temperature dish washer final rinse measured 53.1 dergees Celsius on a max/min probe thermometer. The final rinse temperature must measure 71 degrees Celsius on the max/min probe thermometer or 82 degrees Celsius on the dial. Discontinue use of the high-temperature dish washer for sanitizing and manually sanitize in the sink using a bleach concentration of 100ppm (1/2 teaspoon of unscented household bleach per 1 liter of water). Service technician contacted at time of inspection.
    • 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
      • Bleach sanitizer measured too strong and was diluted at time of inspection; mix 1/2 teaspoon of unscented household bleach per 1 liter of water for a food grade surface sanitizer for use in the kitchen.

    • 33(2) The operator must ensure that all refrigeration and heat-holding equipment has a temperature measuring device that is accurate and in good repair.
      • Obtain a probe thermometer for measuring internal temperatures of potentially hazardous food. The probe thermometer must be able to measure hot and cold temperatures.
