    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: Raw meat is stored above ready to eat foods and produce. Observed large package of raw ground beef stored above baked bread products on a large steel rack within the walk-in refrigerator. Contact with and dripping fluids from raw foods can contaminate other items and lead to food borne illness.
      • Corrective Action: Operator to ensure that all raw meat products are stored below and isolated away from ready to eat items and produce within the walk-in refrigerator to prevent cross-contamination and reduce the overall risk of potential foodborne illness.
    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: No active sanitizer detected in sanitizer containers or spray bottles. Operator verbally indicated the food contact surface sanitizer solution consists of 2 tbsp of rubbing alcohol, dish soap and diluted water and does not meet regulatory requirements. Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface. Environmental health officer provided sanitizing solution dilution information to the operator at time of inspection and additional resources to operator will be emailed with the inspection report.
      • Corrective Action: Operator to ensure and change sanitizing solutions as required to always maintain an effective concentration (200 ppm unscented bleach, 200 ppm QUAT) at all times while the food premise is in operation to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface and reduce the risk of cross contamination resulting in potential foodborne illness.
