    • 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
      • Observation: Dishwashing equipment and 2 compartment sink cannot facilitate regular cleaning and sanitizing of food service articles and implements. (Public Health significance) . Proper / adequate dishwashing facilities is required to ensure adequate cleaning and sanitizing of food contact surface implements and articles to reduce the overall risk of cross-contamination resulting in potential foodborne illness.
      • Corrective Action: Operator shall install either 1) A three compartment sink, with compartment sink basins large enough to completely submerge the largest article and / or implement used in food preparation OR 2) install a 2 compartment sink with compartment sink basins large enough to completely submerge the largest article and / or implement used in food preparation as well as a commercial NSF low-temperature OR high-temperature dishwasher to ensure adequate food service article and implement sanitization on or before July 12, 2026 and notify the environmental health officer.
