      • Bleach sanitizer measured less than 50 ppm. Concentration was adjusted to 100 ppm.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishes were immersed in the sanitizing sink which tested 0 ppm bleach. Water is also cold.Instructed staff to use hot water and prepare the bleach to 100 ppm. Test strips are not available to test sanitizer. *Maintain a temperature of 45 degrees and use 100 ppm for sanitizing.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Bleach test strips are not available to verify sanitizer strength. *Obtain and use bleach test strips.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • A pest control inspection form is expected to be completed monthly.The form will be provided and it can be completed by the owner.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Tongs are placed inside a container of cookies with the handle touching the cookies. *Keep tongs outside of the container.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Prep cooler which is not operational and not in use contains food debris. The wood trim on walls around the kitchen is accumulating dust. *Clean and sanitize prep table and wood trim.

      • A pest control inspection form is expected to be completed monthly.The form will be provided and it can be completed by the owner.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The Food Handling Permit displayed has expired (i.e. Sept. 30/2023). It appears a current Food Handling Permit was sent to the operator by email. The operator can print and display the current Food Handling Permit.
