- Observation(s): Water was observed pooling on the table next to the dishwashing sinks. Install a drainboard on this side so water can drain into a sink basin. Previous inspection comments: Wall next to the dough mixer is rough in texture. If food debris spills along this wall it will be difficult to clean. The wall does appear to be impervious to moisture. Food debris is likely to spill near the dough mixer. Dirty dishes will placed along wall next to three compartment sink. This wall does not appear to be impervious to moisture. Food debris will likely spill on this wall. Current observation: Operator has installed temporary coverings on the areas identified above to make them more easily cleanable. In the future the operator plans to install a more permanent and durable material. Please notify the area EHO once completed.
