- Observation(s): water sampling results have been minimal and only one for 2024. regular water sampling needs to be occurring to ensure water meets Drinking Water Protection Act. Water system (Wally's Well) still does not have a current operating permit

- Observation(s): dishwasher is currently not in service, dishwasher must meet a minimum rinse temperature of 72C at the thermometer, do not use the dishwasher until this temperature is reached

- Observation(s): Due to lack of water sampling history, I was unable to establish if the tasting room is supplied with potable water as required by the Drinking Water Protection Act. The last time the drinking water source was tested by an operator on September 22, 2020 (Total coliforms 3, E.coli -0). ACTION STEPS: - Operator must immediately resume regular water testing / monitoring program of a drinking water source for bacteriological parameters (Total coliforms and E.coli). A water sample must be taken from a tap located inside the tasting room building (e.g. kitchen tap). The frequency of sampling is once a month. The deadline for submitting a water sample is NOVEMBER 18, 2022. - Operator must submit a Construction Permit (CP) application for the Public Health Engineer's assessment and approval of existing and/or proposed works for the water supply system. All required documents must be submitted for Engineering Approval by NOVEMBER 30, 2022. - Operator must obtain a valid Permit to Operate for the water system and comply with all terms and conditions of the operating permit by APRIL 21. 2023.

- Observation(s): - Operator must purchase a waterproof thermometer to monitor and record the domestic dishwasher sanitizing cycle's temperature once a week. The sanitizing cycle's temperature must be above 71C.
