      • Chest cooler use as fridge is too variable from temperature monitoring logs to be used as a reliable fridge and/or be monitored. Corrective actions (records) still required to be performed.

      • Cease use of cardboard whereas uncleanable & replace three broken pallets in walk-in cooler.
    • 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
      • Open faced cooler not holding <= 4C / 40F in foods. All potentially hazardous foods > 4C for unknown time were voluntarily discarded during inspection by the operator. Chest fridge not holding <= 4C / 40F in top layers of meat products for unknown time were discarded. These units are not to be used as refrigerators whereas they are not properly designed / used for that purpose. Open faced cooler must be serviced / adjusted and holding < = 4C in foods in all areas before reuse. Corrective actions must also be recorded. Educate staff.
    • 8(2) - FAILING TO POST PERMIT IN A CONSPICUOUS LOCATION IN FOOD ESTABLISHMENT.
      • Post valid permit for public viewing.

      • Improve labelling on chemical containers (WHMIS) to include concentrations and directions for use.

      • Remove two bottles of expired sanitizer from premises (disposal / credit etc.). Improve labelling on chemical containers to include concentrations and directions for use.
    • 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
      • Two chest fridges not holding <= 4 C in foods to be emptied until serviced / adjusted and holding <= 4 C in all areas. Potentially hazardous foods held >4 hours > 4 C were voluntarily discarded during inspection. Operator to manage issue.
    • 47(1)(a) - OPERATOR FAILING TO ENSURE FOOD IN FOOD ESTABLISHMENT IS LABELLED & IDENTIFIED AS BEING FROM SOURCE SUBJECT TO INSPECTION.
      • Three packs of pork chops in freezer with no labelling. Provide full labelling to ensure traceability. Replace lost labelling on packages.

      • Provide accurate and easily readable thermometer in raw meat cooler and chest cooler.
    • 34 - OPERATOR FAILING TO ENSURE FOOD & FOOD INGREDIENTS ARE STORED IN A MANNER THAT PREVENTS CONTAMINAITON & ADULTERATION.
      • Store raw meats below and separated from fully cooked meats.
    • 8(2) - FAILING TO POST FOOD ESTABLISHMENT PERMIT IN A CONSPICUOUS LOCATION.
      • Post valid permit for public viewing.
