    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The manager indicated that Quats is used for surface sanitization but was unable to locate the sanitizer and test strips. Please ensure that a food-grade sanitizer and appropriate test strips are available to verify sanitizer strength. All food-contact surfaces—including the water dispenser, display coolers, and food storage shelves—must be cleaned and sanitized on a routine basis.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooler and freezer temperatures were measured at appropriate levels: below 4°C (except the bottom shelf of the open-air display cooler) and -18°C.The manager understood and agreed to remove all lean beef from the bottom shelf from the open display cooler and place it on upper shelves to ensure safe temperatures. The manager will contact a repair technician and update our office.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The walk-in freezer requires cleaning.Please complete this immediately and maintain regular cleaning.

    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • There is a small gap in the bottom corner of the back door to the facility. The manager informed the PHI that they are waiting for the maintenance worker to install proper weatherstripping.
