- Rinse required food sanitizer was noted onsite. Manufacturer instructions for use were reviewed with operator onsite.AHS approved sanitizers were reviewed with operator. Approved sanitizers include chlorine 100ppm, quats 200ppm and iodine 12.5-25ppm.Obtain one of the approved sanitizer solutions for the facility.

- The two‑compartment sink was observed to have a depth of 6 inches, which is inadequate for proper manual dishwashing and sanitization. The sink does not allow utensils and equipment to be fully immersed and easily moved within the sanitizer solution.Ensure compliance by taking one of the following corrective actions:Replace the existing sink with deeper sinks that allow full immersion and effective sanitization of all utensils and equipment; orRestrict the facility’s use to utensils and equipment of shallow depth that can be easily washed and fully immersed in the sanitizer solution within the existing 6‑inch‑deep sink.

- Table under the Gelato machine was noted with unfinished surfaces. Finish the surfaces and ensure all surfaces in the facility are impervious to moisture, smooth, cleanable, wipeable and in good repair.
