    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): • The power for the left hand side hot holding unit goes off when a smoothie blender is turned on. the electrical circuit cannot accomodate both (?). Connect the blenders to a circuit that does not provide power to essential equipment such as coolers, hot holding units etc. Correct right away.
      • F2.5A All equipment, utensils and food contact surfaces used on the premises must be kept in good working order to ensure the sanitary handling of food.

    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): a) The chest freezer (used as a cooler) that is being used to store tofu products was at a temperature greater than 4° C. All to tofu products and other potentially hazardous foods must be maintained at a temperature of 4° C or colder at all times. Move all tofu products and other potentially hazards foods from this cooler/freezer unit and store them in the reefer truck operated by Thai on the Fly mobile. +++Confirmed by phone with event food manager that foods were transferred to the reefer truck shortly after this inspection+++ See #2.5 below.
      • F1.2B Potentially hazardous foods must be stored or displayed at a temperature of 4 °C (40 °F) or colder.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): a) The chest freezer being used as a cooler to store tofu products etc. is not operating properly; this unit must be capable of maintaining a food temperature of 4° C or colder at all times. Adjust the temperature setting, or repair the unit , or replace the unit so that all potentially hazardous foods can be maintained at a temperature of 4° C or colder. b) The top of the chest freezer must be tight fitting to the body of the unit in order to help maintain proper food temperatures. Until the top can be repaired, or the unit replaced, keep weight on the top to help keep it closed. Also, the insulating seal for the top must be replaced. c) Event food manager reports (by phone July 12, 2019) that the electrical issue that was causing electrical breakers to be thrown in the food mobile has been corrected. +++Correct items a&b above right away+++ NOTE: Infraction for improper cold storage of potentially hazardous foods was also noted on the August 17, 2018 inspection report (Salmon Arm venue?).
