- Observation(s): Specific risk material (SRM) was stored in the walk in freezer in plastic bags. The bags were not sealed at the time of inspection. There is a risk for cross contamination between SRM material and other meat products. SRM materials must be properly sealed and double bagged to prevent cross contamination. This infraction was resolved within 24 hours. All SRM are now properly sealed and doubled bagged.
