      • Observation(s): Walk in cooler compressor fan covers had visible dust and dirt build up. Dirt and debris can detach from the fan blades and covers and fall onto food items stored in the cooler, causing contamination. Corrective Action Regularly clean fan blades and covers, ensure that all stored food items are always covered.

      • Observation(s): Meat slicers were only being cleaned once at the end of the day. When in continuous use throughout the day, meat slicers must be cleaned every 4 hours at the longest. Wash and sanitize the meat slicers more frequently.
      • F2.3C Clean in place warewashing procedures must provide sufficient washing and sanitizing action to remove contamination.
