- Observation(s): Large gap under rear door. Gaps under door may allow for pest entry. Replace weather stripping and seal door such that there are no gaps.

- Observation(s): QUAT sanitizer dispenser was dispensing sanitizer at >400ppm. QUAT sanitizer must be maintained at 200ppm to prevent the contamination of food contact surfaces. Contact your chemical supply company to adjust dispenser so that it is dispensing 200ppm QUAT solution. Dilute solution to 200ppm until chemical supply company corrects dispenser, verify concentration with test strips.

- Observation(s): Dry storage area is beginning to accumulate dirt and debris. Food premises must be kept clean and sanitary to ensure safe food, and prevent the harboring of pests. Clean up the affected areas.

- F2.7 Are there handwashing stations available and properly supplied?
- Observation(s): • Both handwash sinks located in front prep area did not contain soap. Operator stated all 3 sinks in the front area are used as dump sinks and handwashing is conducted in the back kitchen handwashing sink. This is not an acceptable method as the back kitchen sinks are not easily accessible to staff. The 2 sinks initially dedicated for handwashing must be maintained and liquid soap must be available for staff. Follow-up inspection will be conducted to confirm.
