- - It appears that the sauce was transferred when the warmer was not fully heated up, resulting in the temperature drop. Ensure the warmer is fully heated up before transferring the food items. Hot tofu sales began at 10am. Ensure to discard any left over by noon. Staff stated that it usually gets used up within 2 hours.

- - Cooked peanut toppings are stored in room temperature - warm to touch.

- - Staff stated the peanuts are prepped in the factory store and delivered hot. They are cooled down and placed in cooler. However there is no cooling log to support this. Equip another hot holding unit to store the peanuts OR receive peanuts that have been fully cooled/chilled from the factory store. They should be either kept at 60C or above OR 4C or below.

- Observation (CORRECTED DURING INSPECTION): Four large metal storage containers of hot tofu on site. There was no hot holding units to keep the food items hot. Multiple hot tofu measured at <60C. There was no time tracking to ensure the food was sold for consumption within 2hrs.
- Corrective Action(s): Discard all the contents inside the storage containers. As noted on the previous inspection report #SJEN-BH9PG8:
- - only three containers per delivery
- - serve all hot tofu within 2 hours
- - hot tofu must be >60C at all times
- - easy access to hand washing
- - toppings must be > 60C or <4C
- The operator has not met any of the conditions noted above.

- Observation: The main handwashing station was completely blocked by two large metal storage containers of hot tofu. The main handwashing station was in an area separated by a door from the food prep/handling area.
- Corrective Action(s): Remove the storage containers. Keep this area clear of any obstructions. The main handwashins tation must be easily accessible. Remove the door that is separating the food prep area and the handwashing station. Staff must be able to wash their hands as frequently as possible without any obstructions when handling food.
