- Observation: Line cooler lids are detached from cooler and it does not appear that any repairs have been made to hinge mechanism to allow lids to function as intended. Staff stated that the operator intends to replace cooler.

- Corrective Action(s): Have this deep cleaned and sanitized today and ensure this is done more often to prevent a build-up.

- Observation: Observed both covers for the top of the line cooler were unhinged and propped up against back wall. Hinge for covers for these covers appeared to be broken (screws for at least one of the pins for the lid to pivot on in the hinge was missing). Fan was placed in front of cooling unit, staff stated that when it gets hot the cooler can struggle to maintain temperature. No pizzas were being prepared at the time of the observation.
- Corrective Action(s): The lids must remain closed to help keep the unit maintain proper temperature at all times. Staff did close the lids at time of inspection but it took significantly more effort and time to close than if the lids remained on the hinges. Repair the hinge mechanism and have the lids remain on the hinges to allow staff to close the lids easily and quickly. Another latch may be installed to prop lid open higher to allow staff to read the recipe cards on the underside of the lids.
