    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Improper thawing was observed. Frozen chicken was left on the kitchen counter to thaw. The operator moved the chicken into the cooler during inspection.2. Cooked chicken, dressings and coleslaw removed from the cooler about 15 minutes before inspection were placed on top of ice without proper ice coverage for the containers. The operator moved the food items back to the cooler during inspection. Please note that if food items are to be placed on ice, the containers must be properly covered with ice and the temperature of the food items maintained at or below 4 degrees C.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Displayed food handling permit for the facility had expired. The operator displayed the current permit during inspection.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the front food handling area was not equipped with soap and paper towels. The operator indicated that the hand sink in the back is currently being used for hand washing. Please ensure all handwashing sinks are properly stocked with soap and paper towels at all times. The operator later provided photos confirming that the front hand sink was properly stocked with soap and paper towels.*Please ensure paper towels are stored in appropriate dispensers to prevent contamination.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • -A ceiling tile was missing in the kitchen. Please replace. -The wall surface behind the hand sink in the kitchen was detaching. Please repair to ensure surface is smooth, durable and easy to clean.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • -Food container surfaces were soiled. Ensure all surfaces are clean and sanitary. The operator later provided photos showing the cleaned containers.-Utensils were being stored in an unsanitary and disorganized drawer. Ensure all utensils are stored properly. The operator later provided photos showing the cleaned and organized drawer.-Cups were being stored in seasoning containers. The operator was instructed to remove cups from the containers. Please obtain scoops with long handles or store scoops outside the containers so they do not come into contact with the food. Corrected onsite. The operator removed the cups from the containers.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The ice machine had some build up on the inside. Please clean and maintain.
