      • Corrective Action(s): Contact pest control company immediately to diagnose drain fly problem and to remove drain flies on site. Submit past and future reports from the pest control company to the health inspector for review. Keep all doors closed at all times to prevent pest entry on site. Maintain a clean and sanitary space near the dishwasher and in the back storage room. Remove all sources of moisture and food build up to prevent further drain fly breeding. Replace fly traps frequently to prevent physical contamination of food. Keep all food covered and stored at least 6 inches off the floor.

      • Observation: Multiple drain flies observed in the dishwashing area and in the dry food storage area on site during inspection. Sticky fly traps have been replaced. Pest control company has been contacted, however invoices were not provided to the health inspector to verifiy service during inspection.
      • Corrective Action(s): Contact pest control company immediately to assess, treat and remove the current drain fly population and to place traps and/or treatment as necessary. Submit the pest control report to the health inspector once service is complete. Ensure all garbages and organics are removed at least two times daily. Ensure all foods are kept covered and protected from potential contamination at all times. Schedule routine visits with the pest control company for the next three months and submit the reports to the health inspector for review.

      • Observation: Counter top in dishwashing area is made of wood and is observed deteriorating. Wall behind dishwashing area is not wipeable material and food debris are observed built up on the counter top between the grout/sealant. The counter top is also observed falling apart at the back left side. Dishwashing counter is observed built up with moisture.
      • Corrective Action(s): Submit plans to the health inspector for the following:
      • 1. Replace the countertop in the dishwashing area to a non-porous, smooth, wipeable material (i.e. stainless steel), ensuring all parts are in tact to the wall to prevent leaks onto the ground and/or onto the wall.
      • 2. Install wipeable backsplashes on the walls directly behind and beside the dishwashing area to prevent moisture build up and mold growth. Porous, wood material as surfaces in the dishwashing area leads to moisture accumulation which can lead to mold growth. Surfaces which are broken and/or porous are difficult to clean and sanitize and can lead to potential contamination of equipment.
      • Once plans are reviewed by the health inspector, an inspection will be scheduled with the operator.

      • Observation: [REPEAT VIOLATION] Ice machine observed in unsanitary condition with black debris build-up near the filter and along the back.Staff was shown the areas that were built-up with debris. Staff turned the ice machine off and ice was discarded during time of inspection
      • Corrective Action(s): Keep the ice machine turned off and place a sign on the ice machine to ensure staff is aware to keep the ice machine turned off. Clean and sanitize the ice machine with 100 ppm chlorine concentration sanitizer (or as per manufacturer instructions) to remove build-up and/or potential bacterial and/or toxins. Place a cleaning schedule for the ice machine in a convenient location to ensure staff are cleaning and sanitizing the machine regularly routinely. Do not use the ice machine until it is verified to be cleaned and sanitized by the health inspector.

      • Observation: [REPEAT VIOLATION] Large quantity of drain flies observed on site in food storage and dishwashing areas (more than last routine inspection). About 20 flies flew out of the dishwasher during time of inspection. Flies are not observed in the food service/preparation area during inspection. Staff stated that they have been pouring hot water down the drains.
      • Corrective Action(s): Replace all sticky fly traps in the food storage area. Place new sticky fly traps in non-food preparation areas (storage room, away from dishwashing and in food storage area). Ensure all foods are covered and stored at least 6 inches off the floor at all times to prevent potential contamination. Drain and prime the dishwasher to remove any potential source of contamination and/or fly breeding areas. Clean and sanitize the inside components of the dishwasher (as per manufacturer instructions). Contact pest control company if the fly population does not reduce and/or increases. Failure to comply may lead to progressive enforcement.

      • Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (naniamo bars) observed stored in display cooler at front service area measured at 9.0'C. Staff mentioned that the bars have been in the cooler since this morning. Potentially hazardous foods were discarded by staff during time of inpsection. Staff mentioned that this cooler will not be storing any potentially hazardous foods moving forward and that any bakery items which require storage of 4'C or lower will be placed in a functioning cooler.
      • Corrective Action(s): Ensure all potentially hazardous foods are stored at 4'C or lower at all times to prevent time-temperature abuse and to prevent growth of harmful bacteria and/or toxin production. Display items must be labelled "display only" to prevent sales of temperature abused foods.

      • Observation (CORRECTED DURING INSPECTION): 1. No chlorine residual detected on dish surface / in rinse water for low temperature dishwasher. Note: Maximum water temperature measured 47 degrees C at the dish surface.
      • 2. No detectable sanitizer available in buckets with wiping cloths and in spray bottle (all labeled as "sanitizer"). Quats and chlorine test strips used.
      • Corrective Action(s): 1. Ensure low temperature dishwasher is capable of sanitizing dishware (at least 50 ppm chlorine must be achieved in the rinse residual at utensil surface). Have dishwasher serviced as needed to meet these requirements. In the interim, a bleach water sanitizer solution at 100 to 200 ppm chlorine was prepared in one of the ware washing sinks. Once utensils/equipment are washed and rinsed in the dishwasher, ensure they are sanitized by immersion in the 100 to 200 ppm chlorine sanitizer. Only single use utensils are permitted for customer service at this time. Ensure all utensils and equipment on the premises are resanitized.
