- Cooked fries, cheese slices, burgers and milk all stored at room temperature at the time of inspection. All items had been at this temperature for less than 1 hour so the operator moved them to proper holding temperatures (4C or 60C) during the inspection. Ensure higher risk products are stored at either 4C or 60C whenever possible. High risk foods that have been stored at room temperature for 2 hours must be discarded.

- Even when pests are not evident a pest monitoring program is required. Pest monitoring is not in place. Operator indicates they have traps but have not placed them yet. Ensure traps are placed in all food storage areas and records of monitoring activities are maintained at least monthly. A sample pest monitoring record will be provided with this report.

- A probe thermometer is not available to check the internal cooking temperature of food. Obtain a probe thermometer. Thermometers are not available in all coolers. Ensure all coolers have a thermometer inside for monitoring temperatures.

- A water sample was submitted on Mar 26. Sampling must be completed every month of operation and before beginning operations every Spring. A food grade hose is required for filling the water tank.
